Introducing Demi-Tone (Blueberries) as the latest addition to our lineup of refermentations with spent fruit, joining esteemed companions like La Vie en Rose (Raspberries), Detritivore (Cherries), and Grim Harvest (Blackberries). Through our journey, we've embraced the challenges of blueberries, overcoming past setbacks, including the notorious Blueberry FAIL of 2014. Now, Demi-Tone stands as a testament to our dedication to harnessing the complexities of native yeast and bacteria. Crafted from a young farmhouse ale, it undergoes a transformative refermentation with spent blueberries from Jester King Colour Five, resulting in a nuanced expression of flavors and aromas. Unfiltered, unpasteurized, and naturally conditioned, Demi-Tone boasts a harmonious blend of well water, malted barley, wheat, oats, and hops. With an ABV of 6.3%, 11 IBU, and a finishing gravity of 1.001, this batch marks a milestone in our brewing journey, packaged on March 7th, 2017.
